Do we have to stick to a menu plan?

Hello Dear Reader,

My menu plans are not written in stone. I check out what we have and make a mental note of what it can become. Then, I make my shopping list. I make a menu plan that can be changed to cook with what ever we have.

I've emptied the freezer and we'll eat the chicken casseroles with veggies and potatoes, the salmon will be steamed and put in the fridge. It can go in packed lunches or feed all of us in a Caesar salad. The sausages will be skinned and turned into pork meatballs as they go further that way. The chicken will go into two chicken and leek pies. The contents of the picture above could feed us all for a week. 

However, there are no hard and fast rules, I have a menu plan not a menu decree from a power that will punish me if I don't stick to it. 

Here are some available options for us this week.

Salads or leftovers or sandwiches for lunch at work.

Here's what's on the plan that I can make with ingredients I have.

Savoury veggie pancakes with extra veggies on the side.

Ham, egg, chips and beans, with or without any of those ingredients.

Vegetable crumble with extra veggies.

Stuffed peppers with salad.

Mushroom, leek and bacon risotto.

Chicken and leek pie with veggies.

Pork meat balls with tomato sauce, homemade oven chips and salad or cooked veg.

Caesar salmon salad with baked potato.

I will get seven main meals out of the contents of my fridge and freezer, I just need a 'small shop' this week.

It's back to thrifty home cooking and topping up our savings. Being back at work is great as it's then I set aside money that helps us have a happier future including trips away; And yes, we're already planning those.
