Not true to the recipe that I found on BBC Food as I had to adapt as I didn't have all the ingredients.
I didn't have any gram/chickpea flour, so I used blended chick peas instead.
Here's my recipe
240g of drained chickpeas 38p
60g of SR gluten free flour (you can just use wheat flour) 2p for wheat flour
2 tsp of garam masala 10p
1 tsp of chilli flakes - or one finely chopped fresh chilli (I didn't have fresh chilli) 5p
1/2 tsp salt
1 FR egg 16p
1 tsp of curry powder or paste 5p
300g of potatoes, cut into very small cubes (I didn't cut mine small enough and some didn't cook well enough. I used sweet potatoes as that's what I had but I think regular potatoes would be better for this and would cook quicker. We buy 25kg of spuds at a time so the cost is very low. 10p
1 large onion - finely chopped 16p
4 frozen nuggets of chopped spinach, defrosted and then I squeezed the liquid out.5p
Total cost £1.07 - I made ten so just under 11p each and we ate three each for supper and the rest were frozen for another day.
I didn't have any fresh mint to make raita, so I used half a large pot of value yoghurt - 22p, a 2 tsp of mint sauce - 6p and 1 tsp of mild chilli powder 5p. I didn't add any cucumber as we ate that as part of our salad. 33p for the Raita - with salad our supper was well under my usual £1 limit.
To make the pakoras
1. Add the egg, flour and chickpeas to a blender or food processor.
2. Switch on and add water until it forms a thick batter.
3.Transfer to a large mixing bowl.
4. Add the spinach, onion and potatoes.
5. Half fill a deep pan with sunflower oil, you will heat this and do not leave it!
6. When hot, carefully lower a large spoonful of the vegetables and batter into the hot oil
7. Cook on each side for five minutes.
I made these with a whiff of spice as DB doesn't like spicy food, if you do, chop two chillies and add that along with some freshly chopped coriander if you have any.
I like to make these as they freeze well and can be warmed in the oven when defrosted.
I'm busy making another quilt, I'm off to St. Ives tomorrow to have the day out with a friend and we've been busy in our garden. We've had warm weather of 23 degrees in our garden today; the sunshine and warmth is such a welcome relief as it being so chilly for so long.
