Bread Machine Cornish Saffron Cake

Hello Dear Reader,

My recipe is an adaptation of a Brioche recipe from my Morphy Richards' recipes that came with the bread machine. This makes a 1 1/2lb loaf and takes 2 1/2 hours in the bread machine on the sweet setting. The bread machine always requires that you add the wet ingredients first and the dry afterwards. It's a sweet buttery bread with fruit and flavoured with saffron.

Eggs - 3 medium eggs - beaten 
Butter - 1/2 cup melted - that's about 150g
Milk - 1/3 cup
Pinch of saffron steeped in 3 tbsp of hot water
Strong white bread flour - 3 cups
Salt - 3/4 tsp
Dried yeast - 1 1/2 tsp - I use Doves Farm.
2  tbsp sugar.
1/4 cup of mixed dried fruit - my machine has a dispenser which adds them after the first kneed. 


Switch the machine on and go out and do some gardening, go for a walk with the dogs or just put your feet up and read a book.
