Spinach and Chickpea Pakoras with Raita

Hello Dear Reader,

This whole supper came about as I had natural yoghurt that needed using up. I hate waste. I often discard a meal plan if something might go off soon. Everything else was from the store cupboard.

To make this you will need

1 tin of chickpeas - warmed in the microwave and them mashed 39p
1 handful of frozen spinach, defrosted in the microwave, then squeeze all of the water 5p
1 mugful of Gram Flour - chickpea flour - 23p
2 cloves of garlic finely chopped 2p
1 teaspoon of chopped chilli 3p - from a jar
1 tablespoon of chopped ginger 10p - from a jar
(I buy gram flour, jars of chopped chilli and ginger in the International Supermarket in Plymouth - we sometimes call such shops 'Asian' supermarkets and they sell food at better prices than the supermarket. It's also where I buy chickpeas, lentils and other store cupboard ingredients)
1 tablespoon of cumin
1/2 teaspoon of baking powder (I use GF but you can use any)
Sunflower oil for frying - 20p

Total - £1.02

salt and pepper to season - you could also add Garam Masala is you have any...........I didn't.
Plus, water to create a batter.

These could have been a lot spicier, these had plenty of flavour but may have been nicer with some chopped fresh corriander (cilantro) .

I then spooned the mixture into shallow oil and fried them. Traditionally, these are deep fried but I don't have a fryer.


The Mint and cucumber Raita is so easy! 
Half a cucumber - grate onto a tea towel and then form into a knot and squeeze all the water out - 20p
1 large pot of yoghurt 45p
1 tablespoon of dried or fresh chopped mint - 3p
1 teaspoon of chopped chilli - 2p
salt to taste -

Total - 70p
Blend together and serve the Spinach and Chickpea pakoras.

Really, really cheap. Very filling and totally delicious! As usual, I made enough for supper tonight and lunch tomorrow. £1.72 for four portions so 43p per meal!!!!! We also had half a Romaine lettuce each adding another 27p to each meal.........still, only 70p for our supper!

All of this came about because of an opened pot of yoghurt. I think this will certainly go on our menu on a very regular basis.
