Hello Dear Reader,
Thanks to the cheaper supermarkets, little treats such as balsamic vinegar, blue cheese and Chorizo are now affordable. I also have a view that I'd rather eat a smaller portion of good food that a massive plate of a cheaper ingredients. Consequently, our meal sizes have shrunk.
For supper we had risotto, it's so quick and easy, I think risotto is now the nation's Spaghetti Bolognaise!
I made four portions, two each for tonight and two each to be heated for our lunch tomorrow. All the ingredients were from our local Aldi.
1 Butternut squash, peeled and cut into small cubes 89p
1 small onion, finely diced,3p
1 courgette finely diced 30p
1/2 Chorizo sausage, skinned and cut into small cubes, 75p - this can be omitted
2 cloves of garlic - finely diced 1p
2 tablespoons of Olive Oil 9p
150g of Arborio rice 27p
1 stock cube made into 1 litre of stock.6p
1 tbsp of dried parsley 5p
50g of Blue Cheese - 33p
Total - £2.78 - 93p per portion
To make this:
- Fry the squash, onion, courgette and garlic in some oil.
- Add the diced Chorizo
- Add the Arborio rice
- Add the stock, one ladle full at a time, stirring gently until the rice has absorbed the stock
- Keep adding stock until the rice is soft and stock absorbed
- Serve in a bowl, crumble some blue cheese on top - I used Aldi's Danish Blue, at 99p for 150g. A tiny bit goes a long way.
By the way, Aldi do not sponsor me and my opinions about their products are my own. They are considerably cheaper than any of the other supermarkets and definitely save me money by shopping there! Along with my local butchers, it means I rarely spend over £1 for a main meal and I can still cook delicious meals and keep to a budget.
