Hello Dear Reader,
This is a cheating supper tonight! However, it's what we all have to do once in a while to get food on the table as quickly as possible. It's all cooked in the steamer and dead easy.
I used
One salmon fillet per person (currently on offer in Morrisons - 2 large fillets for £2.50)
Frozen broccoli
Frozen sweetcorn
6 small tomatoes cut into quarters
Sprinkle of dried chilli flakes
1 pack of microwave brown rice (I bought these at 55p a sachet of 250g cooked rice in Asda).
One teaspoon of runny honey
Two teaspoons of GF soy sauce
Fill the bottom of the steamer with water, when at boiling point add the brocolli and sweetcorn to one layer and the salmon to the other layer.
These will take about ten minutes to cook. Don't over cook the salmon any fish is best when it's just cooked.
The rice just needed microwaving for two minutes. When everything is cooked, combine the rice, veggies and chilli flakes and stir gently.
Combine the honey and soy sauce and mix well. This will need drizzling on top of the salmon when you've plated all of the food.
I haven't eaten fresh salmon in literally years and it was meltingly delicious. I'll be buying this when it comes round on offer again. It's farmed fish but I don't have a problem with that even though I often buy frozen wild salmon. I don't currently have a lot of fat in my diet and the salmon was rich and really satisfying.
The sweet and salty glaze really added to this and again, this is a Slimming World friendly menu with half a syn per portion for the honey. This would work well cold for lunch the next day and would reheat well as a stir fry.
We got home from work at five and had eaten within half an hour. As I'm no longer eating between meals, I'm really hungry by meal times and need to eat on time. I like to build up a hunger between meals. My meals might be slightly more expensive but I'm eating nothing between meals so I think the cost has balanced itself. I'm also building a better relationship with food as I'm eating what I need and the right amount to sustain me for at least six hours or over night.
