I've made carrot and lentil soup for my lunches this week.
1 litre stock - from cubes.
600g of carrots, don't need to peel, just chop.
150g red lentils
1 diced onion
1 tsp cumin
1tsp chilli flakes
Pop the lot in a pan, simmer until the carrots are soft. Mash or blend , add more stock if it's too thick. It's a fiery soup, cheap and will keep me going for lunch for four lunches.
As its Yorkshire pudding day, I treated us to a beef joint...brisket and I slow cooked it in the top oven on low for four hours.

I made mine with 100g of gluten free flour, 100ml of milk, 2 beaten eggs and a pinch of salt.
Heat the oven to 200C, add some dripping to a hot pan and pour in the batter.
Cook for 5-10 minutes.
The brisket was cooked until it could have been pulled apart with forks.
Serve all together with gravy, of course the Yorkshire puddings and some veggies.
The rest of the beef will go into chilli beef hotpot tomorrow.
That's it for today folks. This weekend has been all about visiting the offspring, who are in fine fettle. The house has been cleaned, the laundry is done and put away, the shopping has been put away, the menu is planned for the week.
