Did you think I'd stopped eating? No chance!
Tonight's simple and cheap supper was meatballs in tomato sauce with grilled field mushrooms.
I used a pack of meat balls, which are just made of minced/ground beef. 99p for 12 (my local butchers sells multiple packs of meatballs, usually buy one get one free)
They were tossed into a hot frying pan along with
1 chopped onion, 89p for 7 so 13p
1 chopped pepper, 95p for 3 so 31p
1 chopped courgette. 89p for 3 so 30p
I sauted the veggies and meatballs until the meat balls were cooked through. Take one out of the pan, cut it in half to check that it is cooked.
Next, I added a tin of chopped tomatoes, 31p
a sprinkle of dried garlic 2p
a big sprinkle of both mild chilli powder and smoked paprika.4p
I then simmered that for another ten minutes, stirring continuously.
The field mushrooms were peeled, had their stalks removed and drizzled with olive oil and sprinkled with salt. I then placed them in my top oven on high for fifteen minutes.

total cost - £2.89 - served two very greedy people! This could have been stretched a lot further.
The results are supper within half an hour of getting home, with tons of spice and flavour. To stretch this for a family, you could have more veggies and serve it with some rice. My expanded waistline doesn't need too many carbs right now, so I'm cutting back.
