Sausage Paella

Hello Dear Reader,

This truly is a 1. we're skint and 2. use up what we have meal. I really need to go shopping but as we've got so much to pay for this month, (doesn't that sound like last month! sheeeesh!) that we'll have to make do with what we have.

From my freezer.

A pack of chorizo sausages from Lidl,  a handful of peas and an even smaller handful of prawns.

From my store cupboard some Paella rice, a stock cube and a sprinkle of saffron.

Plus a finely chopped large onion and a splash of olive oil.

1. Chop the sausages and the onion - cook in a pan in some olive oil
2. Add the rice and stock.
3. Add more stock or hot water if the rice is not soft.
4. Add the peas and prawns and cook for five to ten minutes.

I know, I over cooked mine and my peas wrinkled!

I cooked enough for us to have a bowlful for supper and another portion each for our lunches tomorrow. About £3. 50 for the lot for well under the quid boundary for each meal.



Apologies for my absence last night. Long story but I feel like a moan. We have a twenty mile car journey home, out of Plymouth, over the Tamar bridge and along the A38 to Liskeard. Alternatively, we drive through Devonport, onto the Torpoint ferry, drive through roads adjacent to and joining the A38 just before Liskeard. Yesterday, it was gridlocked and we had to travel via Callington and the dark and windy back lanes to Liskeard. Bloody traffic was terrible and it took an hour and a half to get home!!!! Consequently, I came in and made some toast, put my PJs on and went to bed.

Tonight? I was home in forty minutes and was able to make and eat supper without frothing at the mouth!

Over to you? Anyone else want a moan about the state of the conjested and over crowded roads? Who else has a totally unpredictable commute which takes as long as it takes? Does anyone lift share? Who's given up and just uses the train instead? We drive together in the car as it's cheapest.
