Hello Dear Reader,
DB has been away today and came home late. I missed him so wanted to make him something special. Well, it's not really that special, Nasi Goreng is Malay or Indonesian for fried rice. I found the recipe on the BBC website and adapted it to the ingredients I had.
To start, you need to cook and drain some rice. I buy 1KG of Basmati rice from Aldi for £1.29 and used 125g of it. 16p worth of rice.
You will then need to make a paste
I used:
3 shallots
2 chillies (I just buy the mild ones)
2 heaped tablespoons of chopped ginger - I buy a huge jar for about £1 in an Asian supermarket in Plymouth, it's also where I buy gram flour for veggie fritters.
1 tablespoon of sugar
5 garlic cloves
1 tablespoon of sesame seeds - I didn't taste these and really think you can leave them out.
2 tablespoons of oil (on reflection, I could have used water)
Blitz in the food processor or mash in a mortar with a pestle.
You can add anything to fried rice.
I used left over pork and a handful of frozen prawns.
I also chopped a carrot, two courgettes and a chopped yellow pepper and three finely diced courgettes.
You could add Quorn, any meat and any vegetable. Traditionally, this is served with a fried egg or even an omelette, cut into pieces and used as a garnish.
I've just noticed my reflection in the kettle! I don't have a wok so made mine in a simple frying pan.
To make this.
- I cooked the carrots along with the rice.
- I fried the courgettes, shallots, peppers and then added the spice and oil mixture.
- I added the rice and carrots and cooked all of it through until it was sizzling hot.
- I added the cooked prawns and cooked pork and made sure everything was thoroughly heated through.
The finished results are hot and spicy, really tasty and I made enough to serve four, for our supper tonight and for our lunches tomorrow. Some people are jittery about reheating meat, I've always done it and survived. It was certainly very cheap, used up what we had and was a nice treat for DB.
