Lentil Chilli with rice

Hello Dear Reader,

The observant among you will notice, there are no kidney beans...................I didn't have any so I substituted for chick peas instead. If I had none of them either, then I would have used baked beans.

I've been soooo busy.

I'm preparing for a frugal food workshop tomorrow, where I am going to cook/demonstrate/teach one of my 'feed your family for £40' menus!! The whole menu!!!! Everyone gets to eat what's cooked and participants will also help me cook. Alternatively, they can cook and I'll watch/teach....we'll see how the day goes. It's a free workshop, funded by a local charity and I'm not charging or asking for a donation for my time for any of the workshops. I'll be running ten workshops over the year, all about budgeting, menu planning, writing shopping lists, stock taking and cooking from a store cupboard when funds are low.

I've been shopping, budgeting, calculating, writing recipes with costings and I've double checked. The participants also get a goody bag full of store cupboard staples.

If anyone wants the full menu, shopping list and recipes as a word document, please follow the 'Contact me' link above and I will send them out asap. Please title your email "feed a family of four for £40" so I can sift through as I get loads.


I served it with a dollop of mango chutney, one of the little treats from my Approved Food cupboard.

I will take photos of all the food tomorrow (no people in the photos) and show you everything that was cooked.

I'm off for a lie down and I will see you all tomorrow.
