Stretched Sausage Casserole with 'sides' for £1.11 per serving

Hello Dear Reader,

Another version of sausage casserole. 

If you gave someone two sausages for their supper they might think you were being a bit stingy but it you skin them and roll them into balls; they suddenly seem so much bigger and go much further. I buy eight Lincolnshire Sausages from Aldi for £1.49 and make four portions of sausage casserole from these. I call this my 'Stretched sausage casserole'. 

You will need/I used (you can vary this any way you like)

1/4 head of celery -finely diced - 19p
1 onion - 4p
1 courgette - 43p 
1 pepper - 33p
6 mushrooms - 23p
1 pack of passata - 500g - 32p
1 pack of sausages - skinned and rolled into balls. £1.50
Mixed herbs - sprinkle/Salt and pepper - garlic if you like

Total cost - £3.04 - 76p per portion. Serve with half a portion of yesterday 'Fidgit Casserole' 35p so the total per head is £1.11


How to make this:


  • Skin the sausages and roll into balls. 
  • Brown in a pan or go posh and get the grill on (more washing up?!)
  • Add chopped veggie and cook..............until cooked.
  • Add pack of passata and simmer
  • Add seasoning (whatever you like) to taste.
  • Serve with rice/cous cous/mash/chips/salad or nothing at all


We're having ours for supper and then as ding cuisine in our lunch boxes tomorrow. As far as I'm concerned, anything in tomato sauce is delicious.

A cheaper version of this would be to just have celery, onions and finely diced carrots cooked in tinned chopped tomatoes until cooked as required.


Before the gluten police start frothing at the mouth, the small amount of stuffing/rusk in the sausages will give me some discomfort but it will be worth it! Also, if the 'nutrition' Hezbollah also get their hand woven hemp thongs in a right knot, this contains: leeks, onions, yellow pepper, mushrooms, courgettes, celery, potatoes, some starch, 70% pork sausages, skimmed milk, low fat cheddar so reasonably healthy. Oh right, who else...........ah yes, if the 'food miles' brigade also go off on one....the only imported item is a yellow pepper. Hang on, animal rights militia.............sausages had the red tractor logo showing higher welfare. I think that covers all bases.

Cheap, nutritious and 'bleddy 'ansome'.

Some news................I'm putting together recipes for the local 'Christians Against Poverty' group and for the local Baptist church where I will be supporting families with feeding a family on a budget. You will be seeing a lot of test recipes over the next few weeks where I am going to try to make meals as healthily and cheaply as possible.
