Hello Dear Reader,
I am rocking the quinoa! This is going to be a regular in my shopping basket. I also love halloumi and usually just have it in the summer, usually at a barbeque. I thought I would inject some sunshine into my dining room and this recipe is really tasty so that you forget you're only eating a small amount of food. I also believe that if I've forsaken eating out in the name of thrift then what I eat at home needs to be of a really good quality, tasty and good for me.
You will need - served three
250g halloumi £1.56 - Tesco (3 for 2 on cheese currently)
2 sweet pointed red pepper - Aldi - £1.25 (you can buy this ready roasted in a jar)
1 small onion - finely chopped - 3p - Aldi
200g quinoa - £2 - Waitrose (I've now sourced some ethical fair trade quinoa in Holland and Barrett)
500ml of vegetable stock - I use a cube and boiling water.
zest and juice of one lemon - 10p - Aldi
3 tablespoons of olive oil - 14p Aldi
Salad - £1.20
Total - £6.28 - £2.09 each. Expensive, but cheaper than three meals in a restaurant with this as the main course. Rich in iron and calcium and nutrient dense so I think it's well worth it.It's also gluten free and won't send my digestive system in a whirl.
1. Heat the oven to the hottest setting - you want to sear your red peppers
2. Prepare peppers and toss in a tablespoon of oil and place on scorching hot baking tray or dish
3. Roast until soft - place to one side.
4. Heat the pan with oil and fry onions until soft.
5. Add the quinoa and cook for a further three minutes.
6. Cook for 15 minutes with the pan covered and just simmer gently.
7. Heat the grill pan until smoking.
8. Slice the halloumi as desired and place in the pan until charred and then turn over and char the other side.
9. Zest the lemon and stir lemon zest, lemon juice and roasted red peppers through the quinoa
Arrange on a plate with crunchy salad (I used up the balsamic dressing I made). Serve the quinoa alongside with the grilled halloumi on top. Stand back and accept the adoration of people who love to be well fed.
